MMMMMM….Baked Penne Caprese! Sunday is the time I use to re-set and prepare for our week ahead. With $25 in hand and 2 hours to cook, I will make healthy meals for 2 of us that will last the entire week. Here’s the menu:

- Chicken Escarole Soup (8 servings)
- Avocado White Bean Salad (6 servings)
- Chicken Salad for sandwiches (7 servings)
For breakfast, we have a choice between shredded wheat cereal and Greek yogurt. For snacks, bananas and low-sugar protein bars.
Mama’s secret today: Buy fresh produce from Aldi’s or PriceRite, cook it up today, freeze it tomorrow and heat up this week.
